Our summer days have been full. Meals with hours of preparation have not been possible daily. With a large family, bypassing the kitchen altogether to eat out is not the solution as a rule. Last night, my "create as I go with what I have" dish was a hit.. or at the least, it wasn't a tragedy! As my 5 year old eyed something new placed on the table, and undoubtedly, bracing himself for the initial first bite, he expressed, "It looks bad, but it smells good." All others simply asked, "What is this called, Mom?" A more mature child said it looked like something from Olive Garden – (immediate brownie points!) 😉
1.5 lb. mild Italian sausage, crumbled
1 clove fresh garlic, finely diced
fresh spinach leaves (about 15) cut in strips
1 can diced tomatoes
salt & pepper to taste
Brown sausage thoroughly in skillet. Add garlic. Then, add spinach, tomatoes, 1 cup water, salt & pepper. Simmer for 5 minutes or so. Serve over rice.
